I haven't had a very healthy diet the last few days. breaky: lemon/ginger tea. 1/2 bagel (good, ny style) with goat cheese and honey. lunch: grilled ww tortilla with cheddar, like a grilled cheese. banana w ice cream. dairy / dairy / dairy fat. yikes. I think I'll finish off with avocado, mashed, with a bit of kimchi mixed in with 'no salt' tortilla chips and an orange after. I just don't want to take the time cooking right now.
Dang. . . i need to cook those mushrooms. where's our vegan, maple, to set a diet on a forward-looking path???

To be fair, that's not too bad IMO. I quite fancy the tortilla chips with kimchi and avo myself!

To put right a misconception, vegan diets are not always healthy. There's a myriad of unhealthy, ultra processed foods out there which are suitable for vegans. It's as easy/difficult to eat healthily on a vegan diet as it is any other.

Personally, I try to avoid over processed foods as much as possible, I try to cook from scratch as much as possible and I try to make sure breakfast is healthy, so that hopefully the rest of the day will follow. I also try to avoid supermarkets where possible as they are designed to get you to buy things you never wanted (usually high fat, high sugar, low cost, high profit items).

My breakfast this morning was chia pudding with banana and pear.

I've recently purchased this cookbook which I'm using a lot.
